Buckwheat Soba Noodles
Soba noodles (そば), made from buckwheat flour and similar in thickness to spaghetti, are a popular ingredient in a variety of hot and cold dishes. Because soba is made from 100% buckwheat flour and can be fragile, many restaurants add a small amount of wheat flour when preparing it.
One of the simplest and most popular soba dishes is mori soba, which is served with cold boiled noodles and a soy-based sauce (tsuyu). Some soba dishes can be enjoyed at any time of year, while others are only available in certain seasons.
How to eat soba noodles
The way to eat soba noodles depends on how they are served:
- Soba in soup (usually hot):
- Pick up the noodles with chopsticks and bring them to your mouth.
- Eat the noodles with a slurping sound, which helps retain the warmth of the soup.
- Soba with dipping sauce (usually cold):
- Mix some chopped green onions and wasabi, if desired, into the sauce.
- Dip the noodles in the sauce and eat, slurping for added flavor.
